The Adriatic sturgeon roe is wonderfully tender, only lightly salted and has a fine nutty note in its full-bodied taste. The roe shimmers in shades of gray, from slate black to medium gray, but can also be amber brown and has a silky shine. Originally native to the Adriatic Sea and surrounding rivers, the Adriatic sturgeon has become very rare and until recently was considered unfarmable.
